It can be hard to get your kids to eat vegetables and fruits. If this is true in your family, you are not alone. As a mother of two, I can honestly say that I can relate to that statement. Both my girls are picky eaters and it’s hard to serve them vegetables in the real form specially when it comes to serving green veggies like Broccoli and Spinach.

While some moms find it easy to serve the vegetables (Broccoli, carrots, spinach etc.) in the direct way to kids, there are moms like me who struggle to find out ways to hide those veggies into their kids’ meal before serving onto their plate.

Last week, I got some free time as my little diva started her daycare. So, after a long recipe blogging break, I managed to experiment this ‘Broccoli Spinach Fritters’ recipe which is super-rich in nutrients and was a hit as an evening appetizer for everyone in the house.

Ingredients:

For Broccoli Spinach Fritters/Patties

1 medium onion,chopped
½ cup Gram Flour
½ cup Ragi Flour(Finger Millet Flour)
1 tbsp Kasoor Methi (Dried Fenugreek Leaves)
3 cups processed Broccoli
1 cup chopped spinach
Salt to taste
1 tsp chaat masala
1 tsp red paprika powder
1 tsp ginger-garlic paste
½ tsp Asafoetida powder
1 tablespoon organic coconut oil (use any oil as per choice, I used coconut oil due to its health benefits)

For Yoghurt-Cucumber Dip:

1 ½ cup Greek Yoghurt
2 tbsp finely chopped pickled cucumber(Slit cucumber in half and dip it in apple cider vinegar overnight)
1 tbsp finely chopped dill(or mint as per choice)
¼ tsp salt

Methods:

Broccoli Spinach Fritters -A Healthy Option for Your Kids SnackTime
1. Take processed(grated) broccoli in a large bowl.
2. Add chickpea flour, Ragi flour, onion, fenugreek leaves, spinach, salt, chaat masala, paprika powder, ginger-garlic paste, asafoetida powder to the broccoli and mix well.
3. Mix all the ingredients and form a dough.
4. Make 8-10 patties with the prepared dough.
5. Heat coconut oil in a non-stick skillet. Cook the patties/fritters on each side until golden brown on both sides. Cook on medium flame to ensure the patties/fritters are cooked nicely from the inside also.
6. To make the Yoghurt Cucumber dip, mix chopped cucumber, dill and ¼ tsp salt with greek yoghurt and whip nicely.
7. Serve the Broccoli Spinach Fritters hot with Yoghurt Cucumber dip or with your favorite sauce.
